1. Introduction (Overview) Sapa is not only famous for its breathtaking mountain views and colorful ethnic cultures, but also for its rich and unique cuisine. This tour invites you to join a local guide for an evening food adventure where you can enjoy dinner like a local. You will have the chance to choose from three authentic Sapa specialties: • Traditional Sapa BBQ cooked with mountain herbs. • Flavorful Hotpot made with fresh vegetables and local spices. • The unique and legendary Black Chicken dish, a delicacy from the H’mong people. This experience is designed to let you enjoy Sapa’s authentic flavors in the way locals do – while learning about the cultural stories behind each dish. 2. Origins of Each Dish Sapa BBQ (Nướng Sapa) In the chilly evenings of Sapa, locals gather around small charcoal grills on the street. The tradition of “nướng” (grilling) comes from the need to cook quickly in cold weather. Vegetables, sweet potatoes, mushrooms, and especially skewers of pork or beef are marinated with local spices such as mắc khén (a mountain pepper similar to Sichuan pepper). BBQ in Sapa is not just food, it’s a social tradition. Families and friends share stories while warming up around the fire. Sapa Hotpot (Lẩu Sapa) Hotpot (lẩu) is popular across Vietnam, but in Sapa it takes a unique twist. The broth is often flavored with cardamom, star anise, wild mushrooms, and sometimes bone marrow from buffalo or pork. Fresh mountain vegetables such as cải mèo (local mustard greens) are added to balance the richness. For ethnic minority groups, sharing a hotpot means sharing community and togetherness – everyone gathers around one pot, symbolizing unity. Black Chicken (Gà Đen – H’mong Chicken) Black chicken is a rare breed raised by the H’mong people in the highlands. Its skin, bones, and even meat are darker than regular chicken. Traditionally, black chicken is considered a healing food in local medicine, believed to give strength and energy, especially for new mothers. Eating black chicken is not only about taste but also about experiencing a heritage dish passed down through generations of the H’mong community.Includes
